Originating with colonial cattle drivers (tropeiros) traveling through Minas Gerais, Feijão Tropeiro is a hearty, low-moisture bean dish. Cooked pinto beans (feijão carioca) are tossed with toasted cassava flour (farinha de mandioca), crisp bacon, paio sausage, collard greens, and scrambled eggs.

What is the farinha for?

Can I use canned beans?

You can — drain and dry them well, and let them take color in the sausage fat. Cooked-from-dry beans with their broth give a rounder dish, but the tropeiro is a practical recipe by nature.
