QuibeBrazilian Kibbeh
A Syrian-Lebanese boteco fusion that sees consistent search volume for party appetizers.
Adapted from Levantine immigration to Brazil, quibe combines hydrated fine bulgur wheat with lean ground beef. Structural cohesion relies on mechanical kneading to extract muscle proteins (myosin), creating a firm binder that holds the shape without added flour.
Ingredients
- 300 g Fine Bulgur Wheat (Trigo para Quibe) — Starch Base & Fiber Structure
- 450 ml Boiling Water (for Hydration) — Grain Hydration Liquid
- 500 g Extra-Lean Ground Beef (Patinho) — Primary Protein Binder
- 100 g Yellow Onion (Finely Pureed) — Moisture & Sweetness
- 20 g Spearmint Leaves (Finely Diced) — Herbal Flavor
- 5 g Syrian Seven-Spice Mix (Pimenta SÍria) — Spice Blend
- 10 g Fine Sea Salt — Seasoning & Protein Extraction
- 20 ml Extra Virgin Olive Oil — Texture Modifier
Method
- Pour boiling waterPour boiling water over the fine bulgur wheat, cover tightly, and rest for 30 minutes
- Squeeze the hydratedSqueeze the hydrated wheat thoroughly in cheesecloth to press out all excess liquid
- Combine the leanCombine the lean ground beef, dry bulgur wheat, onion, mint, spices, salt, and olive oil
- Pass the mixturePass the mixture through a meat grinder equipped with a fine plate, or knead forcefully by hand for 10 minutes to extract myosin for strong protein cohesion
- Shape 60g portionsShape 60g portions with wet hands into classic torpedoes with tapered ends, ensuring the outer surface is completely smooth
- Deep-fry at 175°CDeep-fry at 175°C until dark mahogany brown, then drain

How long does Quibe take?
About 50 minutes of prep and 4 minutes of cooking — 54 minutes total, yielding 20 units ( each).
Can I bake kibe instead of frying?
Yes — press the mixture into an oiled dish, score it in diamonds, pour over melted butter, and bake at 200°C for about 25 minutes. The fried version is the boteco one.
Why squeeze the bulgur dry?
Hydrated bulgur holds a lot of water; left wet it makes the kibe soggy and it splits in the oil. Squeeze it in a cloth until it stops dripping.
