Açaí na TigelaBrazilian Açaí Bowl
An Amazonian fruit dish.
Açaí na Tigela relies on high-shear blending of frozen wild Euterpe oleracea fruit pulp to create a stable, ultra-thick frozen emulsion. Guaraná syrup acts as both a sweetener and a freezing-point depressant. Keeping the processing temperature around yields a smooth, spoonable texture similar to soft-serve ice cream without ice crystal growth.

Questions
How long does Açaí na Tigela take?
about 10 minutes of prep — yielding 2 bowls.
What is the difference between açaí bowl and açaí na tigela?
They are the same dish — the Brazilian original is frozen açaí pulp blended thick, served in a bowl with granola and banana. The Pará tradition also serves it savory with fish and farofa.
Why is my açaí bowl runny?
Use frozen açaí pulp and only enough liquid to blend — a high-speed blender or food processor helps. Add the banana frozen and skip ice; ice melts into water.
